What Is HACCP? HACCP is an acronym for Hazard Analysis Critical Control Point. The system was developed in the 1960's by NASA and ensures the safety of food by identifying critical control points (CCP's) in the food production & supply chain and then carefully monitoring those control points to ensure food is safe. New food hygiene regulations introduced in January 2006 mean that all food establishments must implement and maintain a food safety management system that is based on the seven HACCP principles. How
